亂聚柒的第三站是新香記乞丐雞。
顧名思義的,這裡主打的就是乞丐雞。
乞丐雞也叫叫花雞,記得射雕英雄傳裡頭就有一段描述黃蓉在燒烤叫花雞的經過:
“黄蓉用峨嵋鋼刺剝了公雞肚子,将内臟洗剝干净,卻不拔毛,
用水和了一團泥裹住雞外,生火烤了起来。烤得一會,泥中透出甜香,
待得濕泥乾透,剝去乾泥,雞毛隨泥而落,雞肉白嫩,浓香扑鼻。。。。。。”
從那時起我就對這道叫花雞很有興趣,
沒想到時隔多年後,除了能吃到這道美食外,
還有機會看到它的燒烤過程,這次的亂聚柒還真是驚喜連連啊。

當然,這裡的做法和書上寫的不同,
先是把雞去毛洗淨后加了藥材調味醃製,
然後用紙把雞包起來,外頭再以泥土包裹,接著把雞埋在炭窯里幾個小時,
待雞熟透后用鐵錘把泥土敲開,就是一道藥香撲鼻的叫花雞了。

除了叫花雞外,當天我們還吃了家鄉魚、冬瓜盅和枕頭飯。
記得小時候看過阿姨們煮冬瓜盅,先把冬瓜去籽洗淨,加入水和紅棗冰糖等,
然後放入一個大鍋中,再炭火慢慢熬煮。
記憶中的冬瓜盅甜甜的,對當時還是小孩的我來說實在是的太好喝了。
這裡的冬瓜盅的煮法類似,用的是柴火慢煮,不過卻是一道湯品。
裡頭加了紅棗還有枸杞子,非常的清熱溫潤。

家鄉魚乍看起來乾乾的,沒有任何醬汁調味,不過卻是一道功夫菜。
先是將魚肉起出去骨,加入調味釀成魚漿,煎熟后再拼回魚的形狀。
看似簡單但考的卻是師傅的手藝。
最後的是枕頭飯,它看起來就如一般的荷葉飯。
但做法卻和叫花雞有點類似,
先用荷葉將米粒、冬菇、鹹蛋黃和蠔豉等食材包裹后,再塗上一層厚厚的濕泥,
然後埋在炭窯慢火烹煮成。
經過長時間且封閉式的熬煮,荷葉和其他食材的香味完全被鎖入米粒中,
打開后荷葉,香氣四溢,非常的誘人。

    ooo, i’ve been wanting to visit this place for many years, but haven’t had the chance yet. the cooked chicken looks goooooood. i hope i’ll make it here someday. hmmmm, the live chicken in your last photo looks a bit worried … it realises it will also be eaten soon? 🙂
