我還蠻喜歡吃香蕉蛋糕的,尤其是新鮮出爐還帶有餘溫的。

外表看似平凡,但是一口咬下,淡淡的香氣,鬆軟的口感;

配上一杯黑咖啡,簡直就是人生一大樂事啊。

所以當馬少問我這次的週末廚房想做些什麽時,我就提議試做香蕉蛋糕。

步驟不是很複雜,而且所需用料不多,

要買的就只有香蕉和肉桂粉,而其他的食材家裡幾乎都有了。

平時在超市或水果攤總會看到一些熟透的香蕉,

可是當我們要買時卻找不到,最後只找到一梳勉強算熟的;

心想或許收到第二天應該好些,結果也一樣。

這次的香蕉蛋糕做法看似簡單,但。。。。我們卻“出錘”了。

首先是蛋糕上頭的那層crumple,馬少說都是因為我要拍照,

要他一直搓,結果搓得太多太均勻了,少了口感。

再來是肉桂粉,特地買來要加到蛋糕里頭的,

不過不知怎麼的,到蛋糕放入烤箱后才發現原來忘了放。

最後做出來的蛋糕味道很香,不過一看那蛋糕的texture就知道有問題。

大廚說是我們那toaster oven的溫度不均勻。。。。

雖然失敗了(馬少說不算失敗,只是沒有很成功而已。。。),

不過我還是把它帶到公司當早餐吃。

吃之前放入微波爐烤一烤,然後把它當成香蕉糕(kuih)而不是蛋糕,其實也很不錯的。:P

食材:

牛油125g,幼糖150g,香草精1茶匙,自發粉190g,牛奶60ml

雞蛋1粒(打散),熟透的香蕉2條(搗泥),肉桂粉少許

 

Crumble 奶酥的用料和做法:
將60g的自發粉,60g 褐糖和60g的牛油用手攪拌混合,不宜過度均勻

蛋糕的做法:

1. 用中火把牛油,香草精和糖融成糊狀

2.熄火后加入搗成泥狀的香蕉攪拌均勻

3.依次序分別加入雞蛋、自發粉和牛奶,攪拌均勻

4. 抹一層牛油在蛋糕模上,倒入3的混合物

5. 將crumple的混合物鋪在蛋糕上

6.放入150度的烘爐烤35分鐘

    One of my fave would be banana cake too! and the cake looks so dense! yes.. as u said, having a bite of the cake follow by a sip of long black can be such a great pleasure… Ah.. it would be better if there’s somebody to share with to! ;P

      We felt the cake a bit too dense, more like a banana kuih, hehehe.
      Agree!It tastes better when someone to share with! haha.

    I like to switch the white flour for wholemeal and replace the sugar with some dates and apple sauce for a slightly healthier option. 🙂

  4. ooo, to be honest, i don’t usually enjoy banana cake, cos i prefer to eat bananas as a fruit. this recipe looks nice though. it looks buttery and rich. and i like the golden crust on top of the cake, heh 😀

      呵呵,我們覺得好像太dense了,比較像香蕉糕咧。
      不知道是不是烤爐的問題,馬少說是溫度不均勻,哈哈。

    从帖子里的照片看来,好像是手工的因素——那把木勺加上那种搅拌法确实是做 kuih 的『撇步』。
