週末廚房之蟹肉餅和芒果沙拉 Weekend Kitchen: Crab Cakes & Mango Salad

在來羅安達之前,正值農曆新年,我有約兩個星期的假;所以週末廚房嘛還有兩篇。

不過要再開爐的話不知道要等到什麼時候了。

或許可以試試週末廚房之羅安達篇?呵呵。

其實之前翻食譜時,就曾想過要做這道Crab Cakes炸蟹餅,

可是其中一樣重要的食材—-罐頭蟹肉沒找著,只好作罷。

後來到英國出差時,竟然讓我在Crawley那的Tesco發現了罐頭蟹肉,

於是二話不說就買了一罐回來。

以下是我們參考了食譜后,自己亂亂改編的(尤其是那蘸醬),

還外加了一道芒果沙拉陪著一起吃,變得泰式風味十足。

炸蟹餅的食材:

罐頭蟹肉一罐、日式麵包糠七十克、雞蛋一粒(打勻)、紅蔥頭三四粒(切細)

小辣椒兩三條(切細)、檸檬一粒(汁和細皮)、

七色唐辛子(shichimi togarashi)一至二茶匙、現磨的鹽和胡椒少許

做法:

  1. 把所有食材混合後,捏成小球狀,
  2. 先把蟹肉球沾點蛋汁和麵包糠再下鍋煎(用不粘底鍋,放少量的油)
  3. 在煎的過程中,把蟹肉球壓扁,變成肉餅狀,
  4. 煎至兩面金黃色

蘸醬食材和做法:

把日式美乃滋半杯 (Japanese mayonaise)、兩茶匙芥末(wasabi)、

小辣椒一兩條(切細)、一茶匙魚露、

七色唐辛子(shichimi togarashi)一至二茶匙和現磨胡椒少許混合均勻。

 

芒果沙拉食材和做法:

把青芒果一粒(切細條)、紅蔥頭一兩粒(切細)、小辣椒兩三條、魚露一茶匙、

檸檬汁和細皮、七色唐辛子半茶匙、鹽和胡椒少許混合調味就大功告成了。

我們自己還挺滿意這次的作品的。

那蟹肉餅煎得剛好,而且由於裡頭的食材沒有切得太碎,一口咬下,

還能咬到蔥、辣椒等各種食材所帶出來的不同風味。

如果沾點蘸醬一起吃,那味道就更好。

加上那清新爽口又開胃的芒果沙拉,就變成了我們另類的下午茶了。

      We did this in KL, before I came to Luanda, hehe.
      But I bought that crab meat from Crawley Tesco, which we can’t find in KL. 😀

      Hahaha, I think I can only do a very simple weekend kitchen in Luanda, maybe a homemade lemonade? Since the weather is toooo hot here. 😛

      是呢,拿來當小吃或開胃菜都不錯,做法也簡單,就是那蟹肉罐頭難找了些。
