休廚了一個週末,這個星期我們要挑戰的是–意大利燴飯(risotto)。

說起意大利燴飯,我們之前曾煮過一次,

不過那是朋友從挪威帶回來的盒裝速食版,

份量和調味料都已經配好了,要做的就只是煮而已。

而這次我們則是自己去選購食材,從調味到做飯全包了,厲害吧?

(偶爾要誇一下大廚,不然下次他不玩了,呵呵)

我們做的是蘑菇燴飯,需要買的食材不多,就arborio米、醃肉和乾、鮮蘑菇兩種。

蘑菇和醃肉我們家附近的超市就有了,不過那arborio還真不好找,

去了三個地方,最後還是在BIG那找到的。

煮出來的燴飯帶有淡淡的蘑菇香;

食用前滴幾滴松露油,再來一粒水波蛋,加上煮得七分熟的飯粒,

老實說我們都還滿意這次的成品的。

比起外頭的燴飯,我們煮的較清淡些,

不過吃完了也不覺得膩,可能是牛油和起司的份量都不多吧。

馬少說他在意大利時,朋友的母親煮的燴飯就是這樣。

下次要試試海鮮燴飯,放點新鮮的蝦,那燴飯的顏色應該會更漂亮。

食材:

鮮蘑菇(切片),醃肉(切小塊),大蔥(切丁),1/4杯的乾chanterelle蘑菇,

Arborio米一杯,海鹽、意大利香料、牛油、酒少許,parmesan 起司

  1. 煮一小鍋的雞湯(我們用雞精塊),小火慢煮
  2. 把乾的chanterelle蘑菇泡在雞湯里煮,
  3. 把鮮蘑菇用牛油和橄欖油炒熟放一旁備用
  4. 用中火把大蔥炒熟,
  5. 大蔥熟軟后加入醃肉、一些紹興酒和浸泡過的chanterelle蘑菇繼續炒一會兒
  6. 加入arborio米一起炒,慢慢加入一勺雞湯,繼續攪拌
  7. 當雞湯的水份蒸發后,再加入一勺的雞湯
  8. 重複7的步驟,直到arborio米把雞湯完全吸收,約七分熟。
  9. 上盤后加入步驟3的蘑菇,滴幾滴松露油,加一粒水波蛋

    松露油長得怎樣的?

      早啊夢想成真,松露油就跟普通的瓶裝油一樣,黃色的一小瓶。松露則長得像蘑菇,有黑松露和白松露。

      我覺得七分剛好,稍微有點硬,不過risotto就是這樣的吧1,呵呵。
