我喜歡喝湯,無論中式還是西式的都愛喝。

我想這和我的童年有關吧。

小時候父母要出外工作,而我就寄宿在保姆家裡頭。

她是一位從唐山來漂洋過海來的廣東老奶奶。

印象中除了吃到不少好吃的廣東菜外,晚餐也都一定少不了湯。

有時是藥材雞湯、蓮藕湯等需要較長時間熬煮的湯,有時只是簡單的榨菜或毛瓜湯。

如果是藥材湯的話,還會先到藥材店那配藥材,然後在用炭爐來熬煮。

把長的木炭敲成小段,用火種生火,先用大火煮上一陣;

然後把炭爐的小門關上一半,再用中小火慢慢的熬上一天。

整間屋子裡頭都能嗅到淡淡的藥材香。

現在我們自己住,偶爾也會煮一些簡單的湯來解解饞。

上午到超市買只雞和包好的藥材,然後全都丟進電子砂鍋里,到了晚餐就有湯可以喝了。

簡單又方便,但是就是少了那份感覺。

今天的週末廚房要挑戰的就是湯,而且是西式的南瓜湯。

這還是我們第一次煮西式的湯咧。

從網上參考了幾份不同的食譜后,

馬少做出來的南瓜湯還似模似樣的,味道也不錯,他自己還挺驚喜的。

湯做好后,我們盛了兩碗,在其中一碗裡頭加了炒蘑菇和松露油,

而另一份則加入了醃肉和起司餅。

我覺得我們的薑放得多了一點點,配醃肉和起司餅不錯;

不過配上松露油就不是很搭了。

我們煮了一大鍋,當做簡單的早午餐,

然後晚餐是再配上一些的烤些蔬菜,又是一頓簡單的晚餐了。

食材:
1. 南瓜一公斤、馬鈴薯兩粒、
2. 大蔥一粒(切碎)、蒜頭1粒(切碎)、薑1塊(切成小塊)、
3. 醃肉、Parmesan起司、蘑菇、雞湯(用雞精塊加水煮的)
4. 橄欖油、鹽、胡椒、食油、松露油

做法:
1. 把南瓜和馬鈴薯切成小塊,用鹽和胡椒調味,加些橄欖油,放入350度的烤爐30-40分鐘(至南瓜變軟)。
2. 在熱鍋里放入一湯匙的油,把大蔥、蒜和薑炒一分鐘
3. 加入烤好的南瓜和馬鈴薯繼續炒3-5分鐘,然後加入雞湯和一湯匙的鹽,煮滾
4. 關小火煮15-20分鐘,熄火,冷卻後放入冰櫥
5. 把冷卻後的南瓜湯混合物(4)放入攪拌機攪
6. 把(5)放入熱鍋裡用小火煮,加入忌廉(如果太濃可以加些雞湯)
7. 依個人喜好加入烤醃肉片,炒過的蘑菇、Parmesan crisps或松露油

  4. ooo, i also have good childhood memories of soup. same like you, mostly chinese-style chicken soup with herbs or lotus roots or melon. but my grandmother cooked them with gas, not with charcoal, heheh 😀 your pumpkin soup looks great, very nice color and the texture also seems quite creamy. since baby sumo requested that you add an egg, i’ll request that you add some truffle oil on the soup next time 😀

      Hahaha we did add the truffle oil. Bacon and Parmesan crisps were added in the black bowl and mushroom and truffle oil were added in the white bowl. hehehe.
